Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) black-eyed peas, rinsed and drained
  • 1 can (15 oz) corn, drained (or fresh/frozen corn)
  • 1 red bell pepper, diced
  • 1 bell pepper (orange or green), diced
  • 1 medium red onion, diced
  • 1 jalapeño, seeded and finely diced (optional for heat)
  • 1 cup fresh cilantro, chopped
  • 1 ripe avocado, diced (optional)
  • 1/3 cup olive oil (or avocado oil)
  • 1/4 cup red wine vinegar (or apple cider vinegar)
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (or 2 minced fresh garlic cloves)
  • 1/2 tsp ground cumin

Directions

  1. Whisk the dressing: In a small bowl or jar, combine the olive oil, red wine vinegar, lime juice, salt, garlic powder, and cumin. Whisk or shake well.
  2. Combine the base: In a large mixing bowl, add the drained black beans, black-eyed peas, corn, bell peppers, red onion, jalapeño, and cilantro.
  3. Add dressing and toss: Pour the zesty dressing over the vegetable mixture and stir gently until well combined.
  4. Fold in avocado (optional): If you are using avocado, gently fold it in last so it doesn't get overly mashed.
  5. Chill and marinate: Cover and refrigerate for at least 30 to 60 minutes before serving. Letting it sit allows the natural juices and flavors to blend together.
