Kale Chips

Ingredients

  • 2 bunches fresh kale
  • 5–6 cloves garlic, minced
  • Sea salt, to taste
  • 3 tsp. olive oil
  • 1/4 cup freshly grated parmesan cheese

Directions

  1. Preheat oven to 300°F (150°C).
  2. Remove large stems from the kale and chop leaves into bite-sized pieces.
  3. Wash kale thoroughly and dry very well. Excess moisture will cause steaming instead of crisping.
  4. Place kale in a large bowl and toss with olive oil, garlic, and sea salt.
  5. Spread kale in a single layer on a large baking sheet, avoiding overcrowding. Bake in batches if needed.
  6. Bake for 10 minutes, rotate the pan, then bake an additional 10–15 minutes until crisp.
  7. Remove from oven, allow to cool slightly, then sprinkle with parmesan cheese.
  8. Serve warm or store in an airtight container.
