Nutrition Services
Feeling overwhelmed or confused when it comes to healthy eating? UHS dietitians and nutrition coaches are available to provide you with one-on-one support. We use a non-diet, weight-neutral, and "all foods fit" approach to help you improve your relationships to food and body. We aim to help you learn to make choices that honor your overall health and wellness.
What is nutrition counseling?
Get help from licensed dietitians with navigating lifestyle changes when dealing with conditions such as pre-diabetes, diabetes, high cholesterol, disordered eating, GI concerns, food allergies, PCOS, and more.
Common Topics
- Disordered eating/eating disorders
- Tips for meal planning and grocery shopping given your unique dietary preferences, food allergies, cultural food needs, etc.
- Assistance with managing medical illness/conditions that have a nutrition component (PCOS, diabetes, high cholesterol, high blood pressure, iron deficiency anemia, gastrointestinal concerns, etc.)
- Recommendations for referrals to other campus resources as needed (counseling, physical therapy, medical provider, etc.)
What is nutrition coaching?
Trained peer nutrition coaches can help you reach realistic wellness goals and separate fact from fiction when it comes to nutrition. Get tips and resources to help with making balanced eating a reality. Coaches can provide nutritional guidance that does not involve assistance with managing a medical illness/condition.

Meet your dietitians
Emma Vieira RD
Emma (she/her/hers) is the Registered Dietitian for the Center for Health Advocacy and Wellness. Emma has always valued the teachings of Intuitive Eating and being a part of the Health At Every Size (HAES) Movement. Her main responsibilities include educating students on various nutrition topics that aim to promote having a long-lasting healthy relationship with food and body image through developing programs and events on campus and providing one-on-one nutrition counseling. She provides nutrition counseling to students seeking guidance on various nutrition topics related to general healthful eating, disordered eating, eating disorders, high cholesterol, prediabetes, and many more. Emma received her Bachelor's in Dietetics at Florida State University, completed her internship, and became credentialed by the national association and licensed in the State of Florida, to provide appropriate, safe, scientific and evidence-based nutrition guidance. In her free time, she loves spending time with her weenie dog, Fettuccine, playing board games, enjoying a nice cup of a dirty iced chai latte, and watching reality tv.
Samantha Thoms MPH, RD
Samantha Thoms (She/her) is a Registered Dietitian in the Center of Health Advocacy and Wellness. Before moving to Florida, Sam lived and worked as a dietitian in both Vancouver, BC and Indianapolis, IN. She received her Bachelor’s degree in Human Biology from Indiana University and her Master’s degree in Public Health with a concentration in nutrition/dietetics from the University of North Carolina at Chapel Hill. Sam aims to help students learn to dispel nutrition myths, challenge dominant cultural narratives around health, and develop healthy habits on their own terms. In her free time, she enjoys getting lost in a good book, spending time with her family, gardening, and sewing.
Meet your nutrition coaches
Ariel Rubel
Ariel (She/Her) is a Nutrition Coach for the Center of Health Advocacy and Wellness. Ariel started her undergraduate degree at Florida State University in 2021 and earned her Bachelor’s in Dietetics in May 2024. Ariel is continuing her education at FSU by pursuing a Master's in Nutrition and Food Science along with a clinical dietetic internship. Her goal is to become a registered dietitian in the future! Ariel has a deep passion for nutrition education; she has experience and knowledge in intuitive eating, body image, nutrition coaching, performance nutrition, balanced eating, and meal planning. Her main responsibilities include offering general advice and support concerning intuitive eating, meal planning, meal ideas, and cooking tips. In her free time, she loves to practice yoga, try new recipes, visit nature trails, and journal her thoughts.
McKenna Johnston
McKenna (she/her) is a nutrition coach for the Center for Health Advocacy and Wellness. She is finishing up her senior year as an undergraduate studying Dietetics. McKenna has always loved nutrition education and empowering others to make healthy, sustainable changes in their lifestyle. She coaches and works with students using a weight-neutral and intuitive eating approach while also having plenty of resources to help students with typical challenges that they might face, such as food insecurities, time management, and finding recipes. In her free time, she loves baking, being in nature, traveling, and spending time with friends.
What is weight stigma?
According to the World Obesity Federation Weight stigma refers to the discriminatory acts and ideologies targeted towards individuals because of their weight and size. Weight stigma is a result of weight bias. Weight bias refers to the negative ideologies associated with obesity.
